Summer is not over yet and this cool bedding will satisfy your sweet tooth! If you are like me and have a few pounds of frozen blackberries in the freezer (we grew ours), this is a great way to enjoy them. Or you can make a small batch of Chia Jam blackberry.

This low-carb treatment is adapted from Ice K cream for Ice Cream Keto, a recipe I created for our KetoDiet App). I use cold blackberries but even though each berries will work in this dessert: raspberries, blueberries, strawberries and even blackcurrants.

The best part? This simple wooden ice cream recipe that only takes 5 minutes to prepare and you only need 5 desserts. It seems to be tasty without more sweeteners. If you like ice-cream super, feel free to add a few carrot-carb flavors to your taste.

How to Eat-Free and Food-Keto Ice-cream

I like the combination of almond milk, fat-based yogurt (I use Greek% yogurt of 5%) and mascarpone because it makes a sweet and creamy ice cream with zing, not as rich and heavy. If you do not have dairy, use coconut cream and yogurt and if you do not have a nut, substitute almond milk for each milk type or simply use water.

You can replace a portion of almond milk with a creamy creamy cream. Just keep in mind that you should not use too much cream because the oil may split during mixing and the ice-cream can be split apart rather than fixed. (I did it myself and had to drain all the water!)

Why Addara MCT for Ice-cream?

If you want to increase fat, add up to 4 tablespoons of MCT. Unlike burnt oils in sour cream and coconut, MCT oil remains watery even if it is frozen and ice will not separate. This makes MCT an efficient tool for frozen keto ice cream.

The instructions

  1. You will need only 5 ingredients: blackberries, frozen, fat-free yogurt (or coconut yocon), mascarpone cheese (or coconut ream) and almond milk. If you have blackberries, place them in the freezer for about 2 hours.

  2. Place frozen blackberries in a food processor and pulse until the mixture resembles ice / snow.

  3. Place the remaining ingredients. Optionally, you can add sweetened carb.

  4. Stir until smooth and creamy.

  5. Your ice-cream is ready to serve!

  6. It will be soft, almost uniformly cold so if you prefer it thicker, transfer to a container and freeze for about an hour.

  7. Serve and not necessarily top with fresh or frozen fries. Store in a freezer in a closed container (or one-pot jars) for up to 3 months. Allow to sit at room temperature for a couple of minutes before serving.
